I had some tomatoes, asparagus, and green peppers that needed to be used and
this recipe popped up when I did an ingredient search on
All Recipes. I didn't have any mushrooms and I didn't miss them in the salad. I served the salad with the
rice and beans and in addition to adding color to the plate, it rounded out the meal as a cool, healthy, refreshing side. A squeeze of lemon juice might give the dressing more flavor.
